DIY Nachos featuring The Beans

Last Saturday night we were craving nachos but I hadn't brought any mince or canned beans to make my usual dish. Staying in the Cobb Valley meant we were hours down a windy road from the nearest store so I decided to improvise.. I rehydrated a pack of The Beans - salvaged the other ingredients from our snacks and within 15 minutes we had a big pile of the best nachos I've had this side of the Takaka Hill.

 

This recipe would work perfectly on a tramping trip too:

  • Rehydrate one pack of The Beans
  • Lay down some corn chips in a pot or pan, grate cheese over top (if you have it)
  • Throw the beans over top of the chips
  • Heat in the fire (or oven) until the cheese melts
  • Add some salsa or sour cream if you have it
  • Impress whoever you just made dinner for!
